It´s our pleasure to provide you with information about us, our passion for bread and our bakery.
In future we go step by step to translate our whole website in English, so you can see our professional background. Please be patient....... it needs some time.
After six years to work for the Movie Industry in Hollywood I settled down five years ago in Mexico. For the last two years I worked for different hotels as a consultant, special in there bakeries. In this time I did a lot of research for old European bread recipes and start also to creat new types of breads who are healthy and digestible.
In this time, ask me a lot of friends „why you don’t open a bakery in Cancun, so you can sell your bread for public, too?” What can I say? Martina and I decide in August to open a small bakery just for good breads and other goodies. After all the years in the tropics we know, how people are searching and appreciating a good loaf of bread. We start with Rye sourdough bread with caraway seeds and Swiss 5 grain bread. Certainly we plan to make more bread varieties in the future like German "Vollkorn" Bread, American Pumpernickel with sourdough, Mediterranean Bread and so on. Definitely we will have in a couple of weeks some German cakes in a style like my mom did it, for example: Applestrudel, Cheesecake, Bienenstich (my favorite)...........

It was from the first moment on clear; our bread has to be like in the old days. To do this, we need an oven at least with bricks inside. After month of searching, we found some and I was more than happy. As the oven arrived, we started right now with the first tests by us at home.
The next problem was the flour. Thanks my connection to the US market (it comes from my catering time in Hollywood) I found a company who sales just first class quality of flour.The flour company is certified by * NOFA-NY as an organic manufacturer and is also OU **kosher approved. Same level of quality we get from our European manufacturer. Our sourdough is made from a 2000 Year old recipe from Egypt’s. The bread dough grows only up with our home made natural sourdough and the fresh yeast. This is the result of my yearly long baking tests. All our breads are natural and without any chemical preserves.
All together: oven, sourdough, special selected flour, fresh yeast and our well selected old bread recipes are the result to offer you today a bread with Bio-Quality. Just for your information, if you would like to store our bread in the freezer. No problem! Only, you need to pre-bake them for around 5minutes by 300F degrees. Reason is, our bread has no preserves and by freezing split the water molecules with the rest of the ingredients. To bring them back together, you have to pre-bake our bread so you get the bread like fresh from our bakery.
